You can barely call this a recipe but I háve to share this with you guys.

This iced coffee with coconut and almond milk is a healthy alternative to a latte if you can’t have dairy. But yuck, I hate the word ‘healthy’ and I just used it. I hate it because what’s healthy for me may not be healthy for you and vice versa. And our bodies can handle some ‘unhealthy’ food, as long as it’s in moderation. And what is ‘unhealthy’ anyway?

I am a big fan of eating only real and whole foods (I consider that ‘healthy’), and that’s quite a pain in today’s society. We are surrounded by advertisements for food, restaurants and snacks, sale offers are everywhere and you can buy fast and delicious food at almost every street corner.

This summer I discovered iced coffee, and especially the iced latte. An iced soy latte in my case because I get acne from dairy, so I don’t do normal milk. At home I make my iced lattes with unsweetened soy milk, but almost everywhere else they always use the sweetened version. The iced soy latte from Starbucks tasted quite good so I order that about everytime I run into a Starbucks. And believe me, that’s almost on every street corner here 😉

I have also had other versions of iced latte, what do you think about a salted caramel iced latte and a mint mojito iced coffee? The latter one is SUPER DELICIOUS, and at first one I had to get used to the salty taste but it was ultimately also good. What was far from yummy that was in fact the iced soy latte at The Coffee Bean & Tea Leaf. Yuck that one was way too sweet! I couldn’t finish my cup, so nasty sweet it was.

The next time I craved an iced latte and there was only a TCB&TL nearby, I told the barista that I didn’t like their iced soy latte because it was too sweet for me. She recommended to use the coconut and almond milk that they were normally using for a chai latte. Which turned out to be a lot better than their soy latte and as far as I could taste it wasn’t sweetened.

Time to make one at home because this month I avoid sugar and refined carbohydrates and I also avoid the soy milk and almond milk from the store. There contain stabilizers and thickeners, so it was time to make my own almond milk.
It turned out to be so simple, and also so much fun to do! I used the recipe from Nom Nom Paleo for this Vanilla Almond Milk. Instead of buying an expensive nut milk bag to squeeze the almond milk I bought two pairs of nylon knee highs for just $1.30 at the drugstore. I used only one pair, by folding them over each other. That worked fine! I then rinsed the socks and allowed them to dry so that I can use them more often.

I mixed my home made almond milk with some coconut milk to make a delicious iced coconut and almond milk latte, that has a subtle sweet touch because of the natural sweetnes of the coconut milk. I love it!

Yield: 1 glass iced coffee

Iced coconut and almond milk latte

This coffee is good for you because it only has natural ingredients. I love it!

Ingredients

  • ½ cup home made almond milk
  • ¼ cup coconut milk from a can
  • 6 – 8 ice cubes
  • 1 strong coffee

Instructions

  1. Plan ahead and make the almond milk yourself.
  2. Shake the almond milk and stir in the coconut milk.
  3. Get a tall glass and put the ice cubes in it.
  4. Pour the hot coffee over the ice cubes and add your home made coconut & almond milk to taste.
  5. You can keep the home made coconut & almond milk in the fridge up to 3 days.
