You can barely call this a recipe but I háve to share this with you guys.

This iced coffee with coconut and almond milk is a healthy alternative to a latte if you can’t have dairy. But yuck, I hate the word ‘healthy’ and I just used it. On social media I see a lot of people talking about that summer is coming to an end (well surprise… not in LA! 😉 ), but be honest, do you really need to use summer as an excuse to eat popsicles?!

You haven’t heard from me in a while. That’s because last weekend we took an impromptu road trip to San Francisco, where we stayed for 12 hours to pick up a friend and to drive back on the Pacific Coast Highway back to LA. You’re right, this was my 4th (!!) time in 10 (!!) months that I was driving on the PCH. But this time we went on a whale watching tour and we spent the night in Carmel. The PCH is beautiful but I can tell you that the next road trip that I will plan goes to a National Park or the Grand Canyon or something, I want to see more of the US than only California 😉

Coming home I got a little sick, from tiredness I think. So I was taking some rest and only thought of all the food I wanted to make, instead of actually making it!

But now I can’t wait any longer, because these spicy roasted potatoes with Thai basil cream sauce is so yummy!

But today is a day that I’m feeling guilty. And that’s pretty common for me once in a while. It’s not just one thing I feel guilty about, there are a few things. To start I feel guilty towards in my Red Kitchen. I wanted to post the recipe for this delicious and creamy strawberry chia seeds pudding yesterday, but instead of working (a.k.a. blogging) I took a road trip with my sister to San Francisco. We left on Monday, spent 1,5 days in rainy SF and we drove back yesterday over the PCH. So I failed in putting myself to work and take time to write this blog post on time.

One of the best things of living in LA are the food trucks! My love for food trucks started almost two years, when we were in LA for vacation. P had to work that day and he took the car so I walked to the beach to sit there and read a book. On my way back I noticed I was a little bit hungry and right at that moment there it was: a food truck!

If you browse through my recipes you see a mayority of Asian recipes. Kinda weird if you know that I’m a 100% Dutch girl, with no foreign roots. I also grew up in a small town in the east of the Netherlands, near the German border with no oriental influences at all over there.

I do have a Chinese aunt, she married my Dutch uncle almost 12 years ago when I was 20. She taught me some of her recipes and three years ago I travelled with her to her home town in China for four weeks.

Last week my Dutch blog (inmyredkitchen.nl) had a special post. Although I started blogging in May last year, on July 13 I was ready to share my recipes with the world. I still remember sitting in my living room while my sister was visiting. She encouraged me to post a message on my facebook wall to announce that I had started blogging. I was so nervous to post a message about it, but I also felt kind of proud of my ‘baby’.

So to celebrate this ‘Blogoversary’ I teamed up with Corona, a talented illustrator and also an old friend of mine. I baked a zucchini cake with coconut cream and she made this beautiful illustrated recipe.
