My friend Simone from Simone’s Kitchen is a lucky girl! After she asked me to write a recipe for her blog during her vacation, I had so much inspiration that I came up with two recipes. I didn’t know which one I had to give it to her, so I sent her both recipes.

Last week you could already read about the Guacamole with beet and apple, but this week we’re giving you the recipe for a Mexican shredded beef salad.
And oh boy, this one came out delicious! For a while now this recipe was on my ‘to make’ list that I keep in my phone.

I got the idea for the Mexican shredded beef salad in a modern dinner here in LA. We have been there twice and I ordered their brisket salad both times. I am always a huge fan of trying something new but I can not guarantee that the next time I’m there I’m not ordering the brisket salad 😉

Oh Mexico! What I would like to come and visit you on vacation! But unfortunately we already used our vacation days this year for our visit to the Netherlands. Maybe next year then? Or should we go to Hawaii?

There are always lots of great ideas in my head, ideas for a new logo for this blog, ideas for food styling and lots of ideas for cookies, salads, breakfast recipes or cakes.

Too many ideas for the time I have on my hands, but normally that’s not a big problem because I know I spent all the time I have on this blog. Of course, I want to post more recipes than two each week but I still have another blog (www.inmyredkitchen.nl) that also needs some TLC 😉

But lately I’m experiencing some anxiety attacks…

Sweet-potato-quesadilla-1-inmyredkitchen On Mondays  -after a scrumptious weekend filled with brunches, cocktails and grilled chicken- I’m always craving healthy foods. Kale, quinoa, sweet potato, lentils, chickpeas, avocado, black beans… you’ll name it and I’ll eat it.

I start my week with juices, smoothies, green tea and salads and on Friday that’s slowly transforming into fried eggs, waffles, ramen, caffe lattes and pizza. It’s all about balance right?

Los Angeles is such a great city, it has so much to offer and is really really big. So big that we haven’t seen everything yet so in the weekends we try to explore the city. I say try because we also have to go out for brunch on Sundays and go on hikes on Saturdays 😉

A few months ago we went to Silverlake on a sunny Saturday. We walked around, had some drinks and visited the cute boutiques.
And in one of those cute stores I saw it: the cookbook I wanted to buy for a long time but still hadn’t done it because of our move.

Before moving to the US I wanted to buy a slow cooker, I did a lot of research and it turned out they sell only three different kinds of Crock-Pot in the Netherlands and they are só expensive! And by expensive I mean €49 – €59 and €149 so that will be $66 – $80 and $200

But if I would do it, I would do it right so I saved up some money and went to the store to get some information about ordering them. And one day later my husband received an important email from LA what made me decide not to order the Crock-Pot.

One of the great things of living in California are jalapeños. Spicy, green, fresh and fiery jalapeños.

Believe it or not but it is impossible to find fresh jalapeños in the Netherlands. Unless you grown them yourself of course. I was about to start a jalapeño project this year, but then P found a job in Los Angeles so we moved.

And I bought a jalapeño plant in LA! So I’m harvesting like crazy now, and we have to eat a lot of spicy Mexican food.
