Coconut fudge popsicles

You can barely call this a recipe. It’s so simple, just 3 ingredients in popsicle molds and a few hours in the freezer. I always liked chocolate but weird enough I don’t like chocolate ice cream, chocolate pudding or chocolate sauce.

No, give me a box of quality bonbons or a cup with hot cacao on a cold winter day and I’m a happy girl 🙂 But nobody is giving me a box of chocolates nor is it winter at the moment. Even better! It’s summer and I’m enjoying it. So I grabbed my bike and bought dairy-free fudge popsicles at Wholefoods. They were only 80 calories (yep, I started counting those again) but they also screamed ‘ASPARTAME’ all over them. Yuk!

I decided I should make those fudgy chocolate popsicles myself. I happened to be at IKEA (what else do I do lately? ;-)) and I bought cute little popsicles molds.
I flipped open a can of coconut milk, mixed it with cacao (or wait, is it cocoa?) made those great coconut fudge popsicles.

Wow, they taste like a cup of hot cacao. But then frozen! That makes them the perfect summer treat. When you taste them they give you comfort, just like a cup of hot cacao in winter. And even better: they remind you of those cold winter days so at the same time these coconut fudge pops make you happy and appreciate that it’s summer now.

Maybe all the complaining people in the Netherlands should make those fudgy pops and they start appreciating the sun and warmth again 😉 Before you know it will be raining again!

Coconut fudge popsicles

Prep Time: 5 minutes

Total Time: 6 hours, 5 minutes

Yield: 4 - 6 popsicles

Coconut fudge popsicles

These coconut fudge pops are comforting like a cup of hot cacao in winter. They're so creamy, my new favorite!

Ingredients

  • 14 oz can coconut milk
  • 2 Tbsp cacao powder (unsweetened)
  • 1 Tbsp powdered sugar
  • popsicle molds, 4 to 6 (it depends on how big they are)

Instructions

  1. In a bowl, mix the coconut milk with the cacao powder and powdered sugar for about 5 minutes. You want the cacao powder mixed well with the coconut milk.
  2. Divide the mixture between the popsicle molds.
  3. Place in the freezer until frozen, about 6 hours.
  4. Run a few seconds under warm water to take off the molds easily.

  1. O nice… I could almost eat those even during the whole30 program! If I just leave out the sugar and use cacao (I never know which one it is cocoa or cacao.. 😉 nibs… Looks perfect for today!

    1. Cacao looks better than cocoa to me 😉 I couldn’t find the nibs in LA so I ordered them at Amazon. They will arrive today!

  2. This place, Chocovivo , has nibs and is a bike ride away. My first time trying was a few weeks back at the CC farmers market. Bought the choco/hazelnut paste and chocolate bar. Godd stuff!
