Sometimes you have those days when there is not much coming out of your hands. I’m writing this at 17:09 on Monday and I have only one thing crossed off of my to-do list for today. And there are only four things on my list: doing laundy, buying groceries, buying new plants, writing blog posts.

Doing laundry: I wanted to do this half an hour ago, but all three washing machines in the laundry room were occupied. So I left my laundry basket there, like: ‘I’m next!’, and I went home to lie down on the couch because I was so tired. Now I might or might not have an imprint of my wedding ring on my cheek… But by now my laundry is in the machine though! Up next is the dryer and once I folded it I can cross that off of my list.

Groceries: check! This is the only one I could cross off of my list. Two supermarkets and two full shopping bags later, the fridge is loaded with fruits, vegetables and fish again. I’m again doin a paleo week.
Buying new plants: I actually wanted to do that on my way back from the supermarket, but I had bought fresh fish and I did not bring a cooler bag. Outside it’s almost in its 80’s, the nursery doesn’t have a parking structure with covered parking and fresh fish and burning sun don’t go so well together I think. If I hurry writing this blog post I am still in time to walk to the nursery for a new plant. Otherwise I’ll do it tomorrow. Or the day after. That dead plant on the stool next to the couch stands there for so long now, that it can waint a little longer to be replaced 😉 I do not know what it is with me and plants, I read the labels to see how much water I should give them weekly or every-other-week and I keep track of that. I even give them filtered water because I already discovered that they die from the chlorine in the water from the tap. The dead plant was with us for a few months already and he did very well. But apparently he didn’t like it we left him home alone during a heat wave while we went on vacation. Or maybe he was disappointed in me that I didn’t got him a babysitter. Anyway, he dried up now and is in dire need of a replacent. I will do it this week, I promise!

Writing blog posts: working on it. I have this screen open all day already and six times I’ve typed something, selected it and pushed on ‘delete’. A typical case of ‘Monday’.

I often have trouble starting the new week on Monday and today it seems twice as bad. Blamed it on the holiday weekend. And on Monday’s P’s alarm clock beeps extra early because he needs to go to work for an early meeting. On Mondays I finally get into that lazy-sleeping-in-rhythm of the weekend, so like every other Monday I slept really really really deep this morning and I had trouble waking up. I think I’m still not awake now, despite of the nap I just took.

Ah, there goes the alarm that I use to help me keep track of the time for the washing machine. I’ll take a quick trip to the laundry room to put everything in the dryer, be right back!

Yes, I’m back! Where were we?
Oh yeah, I was about to tell you about this Miso roasted cauliflower.
Every month Frieda’s send me a box of specialty products. Last months box was filled with products to grill:

Look at those cute baby pineapples! And orange cauliflower! I couldn’t wait for grilling that one because I had seen recipes for cauliflower ‘steaks’ many times and I was wondering if that preparation could help me over my dislike for cauliflower. When I think of cauliflower then I think of boiled cauliflower with a corn starch sauce… Yuck!

The orange cauliflower fell apart when I sliced ​​it so I decided to roast it in the oven instead of grilling it on the barbecue. I tried two different marinades and one of them turned out to be the über favorite: with miso paste! But most importantly, I am sold! This way of cooking cauliflower is so incredibly delicious! Why are we still boiling it? Come on, start roasting!

A week later I bought another cauliflower -white this time because my local Ralph’s wasn’t selling the yellow one- and I ate it all by myself, that’s how much I like this miso roasted cauliflower. Don’t be worried, I simply couldn’t even share the cauliflower because P was a week in Cannes in France for work. Ha! A whole cauliflower for myself!

Ever since I read about miso (fermented soybean paste) on Food52 I finally dared to buy it. I love the fermented taste, but I never knew how to use it. Luckily the article All About Miso changed that. I had the white miso for a while already but this marinade was the first time I actually used it.

Actually the marinade was a leftover of the marinade I made for the Baby Bok Choy that I was grilling, but the miso roasted cauliflower was the biggest hit!

You can buy miso paste at the Japanese or Oriental supermarket but also at Wholefoods.

Miso roasted cauliflower

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: 1 cauliflower

Serving Size: 2 - 4

Miso roasted cauliflower

Amazingly delicious soft cauliflower with a salty miso marinade, I'm sold! From now on I love cauliflower!

Ingredients

  • 1 cauliflower
  • 2 Tbsp miso paste
  • 2 Tbsp soft ghee or butter
  • 1 tsp ground ginger

Instructions

  1. Place a baking sheet in the oven and preheat the oven at 380 degrees F.
  2. Discard the leaved and cut the cauliflower in 0.5 inch thick slices. It’s okay if the slices fall apart. Place them on a plate.
  3. Mix the miso paste with the soft ghee or butter and ground ginger. Use a teaspoon to spread half of the mixture over the cauliflower, use the back of the spoon to divide it. Flip the cauliflower pieces over and place them with the miso side down on the preheated baking sheet. Divide the other half of the mixture over the cauliflower.
  4. Roast in the oven for 20 minutes until cauliflower is done and soft.
  5. Serve immediately.
