I love desserts but I try not to eat anything after dinner. Until I got pregnant… My Sweet Tooth took over again so after dinner I always had to take a small dessert. In the beginning I ate lots of those small mochi ice creams, a small scoop of ice cream in a mochi sheet. So delicious! And just enough to satisfy my sweet cravings!

Oh boy … you must think I’m a little schizophrenic. Or at least a little crazy. A bit bipolar with here and there an identity crisis.

For a month I lived without sugar (except for the natural sugars in fruit) and refined carbohydrates, and so I ate super healthy. As pure and whole as possible, just to get some healthy eating habits again. And you could see that on in my Red Kitchen. All the recipes that I shared for the past 1.5 month were sugar and refined carbohydrates free.

And now I’m here again, with a cheesecake with Dutch stroopwafels.
Yeah… a stroopwafel CHEESECAKE. Oh dear… Millions of calories and lots of cream, sugar and butter. And typical Dutch ‘stroopwafels’, caramel waffles a.k.a. the BEST cookies in the whole world. And yes, you can buy those cookies at the American supermarket. Trader Joe’s sells them, and of course Cost Plus World Market too. And look how beautiful this cheesecake came out. Can you blame me?

Nowadays I feel like a super hippie who’s connecting with the earth and I secretly kind of like it. I’ve always been a fan of home made food, to bake my own bread for example or even making hummus or pesto. But lately I thought I had no time to do this, so I bought ready-made hummus and bread which contains much more than just flour, water, salt and yeast.

Before we moved to LA I already started to follow a couple of restaurants, food trucks and LA food bloggers on Twitter. And because of that I looked forward to our move even more! There was so much to discover in LA.

One of the food trucks that I was already following on Twitter & Instagram was Coolhaus. Coolhaus makes ice cream sandwiches. Ice and cookies = ice cream sandwich. Or: one of the most delicious things on earth. Ice cream in combination with something doughy is always a good plan: ice cream with pancakes, cake with ice cream or ice cream in a big cone. Or with cookies of course because… how brilliant is that? Just scoop some ice cream to taste between two soft cookies to taste, that’s exactly what Coolhaus does. Eating paleo for a month, yes or no? That is the big question that keeps me busy right now. If you don’t know anything about paleo (or ‘the cavemen diet’) then you should read the explaination on my favorite paleo blog, Nom Nom Paleo: What’s The Paleo Diet?

Why would I eat paleo for a month according to the Whole30 principle? Because I feel like I need a break again, a break from bad food, just to take time re-think my eating habits. I have a busy half year behind me, filled with visiting family members and of course our own trip to Amsterdam. I’ve been eating out a lot and I didn’t always go on my weekly hike, I ignored my fitness exercises on YouTube and didn’t got my juices every week.

For the past weeks, since April 8, every Tuesday I’ve been to the Food Truck Lot in Santa Monica, that’s quite often right? Okay, except for the two weeks I was in Amsterdam. But still that’s 6 Tuesday evenings in a row, haha! Last week, I didn’t meant going to the Food Trucks because there was enough food in the fridge, some remains of a cooking session that I did for my blog and barbecue leftovers from Memoral Day, the day before.

But my friends thought it was a good idea to meet at the Food Trucks so we could eat there all together. And heck, why not? At least the weather was perfect!
I love it to spread blankets and tarps on the grass and to order food from three different food trucks. Because yes, that’s what P and I did! I only skipped the Ben & Jerry’s ice cream afterwards because I already stuffed my face in truffle fries, everyday is not a Sunday 😉

And yet this week I give this ‘Food Truck Friday’ a festive touch with this delicious champorado, a Filipino rice pudding with white chocolate instead of dark chocolate. So yummy! Normally I never buy desserts at the food trucks, simply because I still want to lose weight and the fries are often my sin.

Who wants to eat dessert for breakfast? I do!

But today is a day that I’m feeling guilty. And that’s pretty common for me once in a while. It’s not just one thing I feel guilty about, there are a few things. To start I feel guilty towards in my Red Kitchen. I wanted to post the recipe for this delicious and creamy strawberry chia seeds pudding yesterday, but instead of working (a.k.a. blogging) I took a road trip with my sister to San Francisco. We left on Monday, spent 1,5 days in rainy SF and we drove back yesterday over the PCH. So I failed in putting myself to work and take time to write this blog post on time.

Oh. My. God. I think I’ve never been more pleased with a dessert than this one. Maybe it’s because I don’t do a lot of desserts. Maybe it’s because there’s alcohol involved.
